TASTING NOTES

The Château Single Vineyard Cabernet Sauvignon displays deep, rich purple and red hues.

The bouquet has lifted aromas of blackcurrant, redcurrant and spice on the velvety smooth palate with hints of cedar and mint. The extensive finish is framed by elegant, fine-grained tannins from 18 months’ maturation in a combination of new and seasoned French oak barrels.

WINEMAKING

The Chateau Single Vineyard Cabernet Sauvignon s grown on our estate vineyard in the cool climate of the Eden Valley.

The grapes are destemmed, but not crushed, and spend seven days on their skins in open fermenters with regular battonage to more gently extract colour, flavours and tannins. Following fermentation, the wine is carefully basket pressed prior to maturation in a combination of new and seasoned French oak barrels for 18 months.

Sourced from the Eden Valley, the 2016 The Chateau Single Vineyard Cabernet Sauvignon boasts lovely notes of red currants and cherries on the nose. Rather than being a dark, brooding wine, it’s more about lift and elegance. Yes, it’s full-bodied, but the gentle brushes of vanilla and cedar enhance and support the red fruit flavors, bringing extra layers to the long, silky finish. It’s already approachable, but it should age well. Drink 2018 – 2035

My favourite Chateau Tanunda wine of the moment …, this high vineyard has captured the tension and structure of Cabernet with determination and generosity. It’s richly layered in precise blackcurrant and cassis fruit, shored up by a firm, fine tannin scaffold that promises great potential.

True to variety, this is powerful and sophisticated at the same time, showing crème de cassis and cedary oak characters on the nose with nuances of tobacco, olive and floral. The palate displays excellent concentration and intensity, wonderfully complemented by fleshy texture and fine, grainy tannins. A splendid rendition. At its best: now to 2030.

These single-vineyard wines are from mature vines and are made with exceptional attention to detail. Hand-picked, basket pressed they are deliciously distinctive and elegant expressions of their vineyard site and climate. Selected from the finest 32 rows of Cabernet Sauvignon on our estate vineyard in the cool climate of the Eden Valley.
