This, soft, supple, flavour some Pinotå is exactly the sort of wine that is helping Otago forge such anå international reputation. Sourced from vineyards in differentå sub-regions of Otago; namely Bendigo, Lowburn and Gibbstonå Valley with an aim for consistency of style between vintages.å Most of the fruit is hand-harvested with a small amount machineå picked at night and 100% destemmed. Fermented in stainlesså steel with a combination of plunging and pumping for colourå and flavour extraction. Aged 10 months on lees in older oak toå retain fresh fruit flavours and given light egg-white fining andå filtration to enhance the softness of texture. In addition to thiså wine we make two individual vineyard Pinots with more extractionå and oak maturation designed for lengthier cellaring.
